Local Junior Chef clinches Bronze at International Competition
Adrian Buttigieg, 21-year-old Maltese chef de partie at the Hotel Phoenicia, claimed the bronze medal at the World Association of Chefs Society Congress 2008 held in Dubai competing for the Hans Bueschkens Trophy. More than a 1000 entries were received in and Mr Buttigieg was the only Maltese chef participating in this event. At 21, he was vying for the Best Young Cook in the World.
The culinary competition aims to inspire young chefs to strive for continuous improvement and to encourage them in perfecting their culinary arts. A panel of 17 international judges, approved and appointed by the World Association of Cooks Societies, evaluated the performance of the chefs and awarded the medals during the event. Hans Beauschkens Trophy competition is focused on perfecting culinary arts skills rather than competing against others. Gold, silver and bronze medals are therefore awarded to those chefs that achieve pre-set international standards in the various categories.
The competition consisted of a practical cookery test called a mystery box challenge, and entailed compiling a three course meal menu and preparing a meal for six with given ingredients.
“I was given ingredients such as lamb racks, a whole chicken, red snapper and Arabic and Indian spices amongst others,” said Adrian. “As a starter I made a Red Snapper Confit, Asparagus Tartar, Garamasala Smoothie, and Watercress Froth and Crab Oil. As main course I prepared a Duo of lamb and Chicken with a carrot and thyme puree, season greens, pomme chateau and lamb jus. As dessert, I prepared a Dark Chocolate and Star Anise Tart, Orange Jelly, Raspberry Mousse and Chilli Anglaise. For these plates I was awarded the bronze medal. It was an amazing feeling winning a medal in such a big contest.”
Adrian competed against twelve countries - New Zealand, Singapore, India, Sri Lanka, Canada, United States, Germany, Portugal, Australia and Wales amongst others. Adrian was declared winner of the Junior Chef of the Year 2007 in the ‘Malta Kulinarja’ Cookery and Culinary Arts Championships late last year. Adrian worked for a year in a 5 star hotel in Luxeumbourg - Le Royal. He also attended a sugar work workshop given in Malta by world renowned master Elena Shramko.
