1. Prof. Aquilina states in one of his works that there's a place in Sicily which is called Cassar, though I've never found the whereabouts of it. Also he says that it could mean as follows:
a person who takes care of a castle.
This he states as in Maltese, for example a person who has/takes care of a bakery is called a furnar, where else a watch/clock repairer is called arloggar. Therefore he concludes that cassar is the person who takes care of a kastell ie. castle.
2. Another professor though I'm not sure who he was states that cassar comes from the maltese word, qassar, since the 'q' in old maltese was similiarly said as a 'k'. That means a barber, literally 'a persons who cuts short' coming from the word qasir which means short.
3. Once I asked a late eminent maltese Chavalier, what is Cassars origin and he stated/assumed that it had Spanish Roots.
Modified Cassars! There are also Kassar and the italianised Cassaro and Cassarino .
If you have to write Cassar in literal Maltese alphabet then it should be Kassar, but since the first written surnames here in Malta where written by Italian Notaries the spelling remained Italian.
