The surname is probably derived from the Basque "xerry" which means "small pig". It was probably given to someone who lived near a place where there are many small pigs.
Sherry is is the angliciced form of "Xerri", considered a variant.
Earliest references to Xerri include the Noble Spanish Xerry family.

Coat of arms granted to the Noble Xerry family of Malta:

Blazon of arms : gules; 3 bendlets sinister, indented or.

Translation : gules(red) denotes Military Fortitude and Magnanimity and evalation of the mind.
